What used to be a txakoli house
Tradition, produce and a cuisine that is still alive.
In Bizkaia, a txakoli was not just a wine: it was a place. Farmhouses on the outskirts of Bilbao would open their doors in spring and set tables beneath the vines. People ate whatever the garden had to offer, played bowls and mus, and drank the house wine from earthenware jugs.
There was no formality. Workers and well-off townspeople, groups of friends and Sunday families all shared the same tables. As the city grew, these places gradually disappeared, and the last of them closed around half a century ago.
Here in Portugalete, known as the villa jarrillera — a name that comes from the small jugs traditionally used to drink txakoli — we wanted to bring back that way of gathering around the table. No vines overhead and a different kind of cooking, but the same idea: eating well, taking your time, and without anyone having to dress up.

El Txakoli is where El Paladar begins: the food we have always known, the kind passed down at home and never written down. Hearty stews, slow-cooked stocks, fish from the Cantabrian Sea and seasonal vegetables.
None of this is meant to surprise. It is meant to taste good and taste exactly as it should. Marmitako, Russian salad, anchovies desalted in-house, blood sausage from Bermeo, cod pil-pil, braised beef cheeks, Lumagorri chicken. Dishes you recognise before you even taste them.
And bread on the table, because half of Basque cooking ends with mopping up the plate.
The Four Biscayan Sauces

If the place is called El Txakoli, the txakoli list cannot be an afterthought. We offer a broad selection of Bizkaiko Txakolina: whites, reds made from Hondarrabi Beltza, rosé and sparkling, alongside wines from Getariako and Arabako Txakolina.
And we also serve it the traditional way: in a small jug.
